Please note, this course is only accepting applications from learners aged 16 - 18, as well as those up to the age of 25 who hold a current EHCP.

Our Professional Cookery course is designed for aspiring chefs who want to develop the practical skills, technical knowledge and confidence needed to succeed in the hospitality and catering industry. Based in our professional training kitchens, you will gain valuable hands-on experience preparing high-quality dishes for customers in our popular East Restaurant and pop-up bistro, working in a realistic commercial environment from day one.

Throughout the course, you will learn a wide range of professional cookery techniques while exploring both classic and contemporary cuisine. You will prepare a variety of dishes, including modern interpretations of traditional recipes, vegan and plant-based dishes, meat, fish and poultry, fresh pasta, breads from around the world, and an exciting selection of pastries, cakes and desserts. You will also develop the finishing skills that elevate every dish, from sauces, glazes and garnishes to beautifully presented sweet and savoury creations.

As well as refining your culinary skills, you will build the professional behaviours employers value. You will learn how to work effectively as part of a kitchen brigade, develop leadership and teamwork skills, manage your own section, organise workloads, solve problems under pressure and prioritise tasks in a busy kitchen. Attention to detail, presentation, sustainability, responsible sourcing, food traceability and maintaining a healthy work-life balance are also key elements of the course.

Course Information


Level 2: at least three subjects at GCSE at grade 4 or above including English and maths. Level 3: Successful completion of the Level 2 course.


Your practical skills will be assessed by observation while working in our popular kitchens. Class-based lessons are designed to give you the knowledge to work successfully in the industry and are tested by short answer questions.


You can progress to an apprenticeship or move directly into employment after gaining valuable industry experience and impressing employers during work placements. Career opportunities include roles such as chef (professional cookery or food production), restaurant management, food and beverage service, bar and barista work, conference and banqueting, and food production services in schools and residential care settings.
