Please note, this course is only accepting applications from learners aged 16 - 18, as well as those up to the age of 25 who hold a current EHCP.

Professional chefs play a vital role in creating high-quality dining experiences, with opportunities available across restaurants, hotels, pubs, cafés and the wider hospitality industry. This course is designed for aspiring chefs who enjoy practical learning and want to develop the culinary skills, creativity and confidence needed to work in a professional kitchen.

You will be taught by experienced hospitality professionals who will help you develop the technical skills and professional behaviours expected within the industry. Throughout the course, you will learn how to prepare, cook and present a wide variety of dishes using professional techniques, while maintaining the high standards of food safety, hygiene and kitchen organisation required in commercial catering. You will develop skills across a range of cuisines, including vegan cookery, street food, meat and poultry dishes, breads, sandwiches and hot and cold desserts.

Practical learning is at the heart of the course. You will gain hands-on experience in our popular East Restaurant and pop-up bistro, working in realistic commercial environments where you will build the confidence, organisation and professionalism needed to succeed in a busy kitchen.

Alongside your practical training, you will develop valuable employability skills, including teamwork, communication, leadership, organisation and problem-solving, while exploring sustainability, food traceability, and health and wellbeing within the catering industry.

We work closely with local hospitality employers to provide valuable work experience opportunities, allowing you to apply your learning in real-world settings and build industry connections. As your skills develop, you will also have opportunities to cater for larger functions and events, providing a strong foundation for progression onto further hospitality and catering courses, apprenticeships or employment.

Course Information


This course is suitable for students who have achieved at least three subjects at GCSE at grade 3 or above including English and maths.


Your practical skills will be assessed by observation while working in our popular kitchens. Class-based lessons are designed to give you the knowledge to work successfully in the industry and are tested by short answer questions.


You can progress to study Professional Cookery. You could also move into an apprenticeship or employment.


During this course you will study a range of units including: professional cookery skills, food safety and hygiene, kitchen organisation, food preparation and presentation, vegan cookery, street food, meat and poultry, breads, sandwiches and desserts, sustainability, employability skills, teamwork, and practical experience in commercial kitchen environments.
