Please note, this course is only accepting applications from learners aged 16 - 18, as well as those up to the age of 25 who hold a current EHCP.

Our City & Guilds Level 1 Culinary Skills course is designed for aspiring chefs who want to develop the practical skills, knowledge and confidence needed to begin their journey in the hospitality and catering industry. Whether you are leaving school, gaining your first qualification or exploring a future career as a chef, this course provides the perfect introduction to professional cookery.

Based in our professional training kitchens, you will gain hands-on experience developing essential cookery techniques and preparing a variety of savoury and sweet dishes. You will learn key skills including food safety, kitchen organisation, nutrition, health and safety, food presentation and professional working practices.

Throughout the course, you will develop confidence in a range of cooking methods, including boiling, poaching, steaming, baking, roasting, grilling and frying, while building the teamwork, communication and employability skills valued by hospitality employers.

By the end of the course, you will have a strong foundation in culinary skills and the confidence to progress into further study, apprenticeships or entry-level roles within the catering industry.

Course Information


No previous catering qualifications or industry experience are required. A genuine interest in food, cooking and the hospitality industry is essential. Learners should have GCSE English and maths at Grade 3 or above, or be willing to work towards improving these qualifications alongside the course. Successful completion of an interview and initial assessment is required.


Your practical skills will be assessed by observation while working in our popular kitchens. Class-based lessons are designed to give you the knowledge to work successfully in the industry and are tested by short answer questions.


You can progress on to study Level 1 to Level 2 and Level 2 to Level 3 Professional Cookery


During this course you will study a range of units including: Health and Safety in the Kitchen, Kitchen equipment and professional working practices, Nutrition and Healthy Eating and Creative dish designs
